Let's be honest I'm not a fan of cooking so if I can whip up a meal in 5 minutes I'm all for it. Today I'm sharing a super quick meal that is a lazy take on fried rice instead using 2 minute noodles (AKA ramen noodles).
Ingredients
1 x packet of 2 minute noodles
1 x tsp olive oil
1/4 onion (red or brown)
Ham or bacon. I used about 6 slices of ham (roughly sliced) however you can add as much or as little as you would like
1/2 cup of corn kernels (can be tin or frozen)
1 x large handful of spinach leaves
1 x egg
1/4 tsp Vegeta (vegetable stock)
2 x Tbs of soy sauce
A pinch or salt and pepper to taste
Instructions Boil the 2 minutes noodles without the flavour added either in the microwave or on the stovetop. I usually place them in the microwave for 4 and a half minutes. I know 2 minute noodles need 4 and a half minutes to cook. I'll never understand it lol.
Drain the noodles and place aside.
Slice up the onion and ham.
Heat the olive oil in a frying pan.
Add the onion and lightly brown.
Add the ham, noodles, corn, egg, spinach leaves, Vegeta, soy sauce and salt and pepper. Mix everything around with a wooden spoon until the egg has completely scrambled through the rest of the food.
Place in a bowl and enjoy!
*this dish would feed 1-2 people.
*feel free to add any other vegetables you may have in the fridge.
*the noodles can also be substituted with rice if this is all you have in the pantry.
